Avocado-Egg Toast - A Nutritious Way to Start Your Day
Ingredients
- 2 slices of whole grain bread
- 1 ripe avocado
- 2 eggs
- 1/2 lemon, juiced
- Red pepper flakes (optional)
- Salt and freshly ground black pepper
- Fresh herbs for garnish (cilantro, chives, or microgreens)
Instructions
- Toast the bread slices until golden brown.
- While bread is toasting, cook the eggs to your preference (sunny-side up, poached, or soft-boiled work best).
- Halve the avocado, remove the pit, and scoop the flesh into a bowl.
- Add lemon juice, salt, and pepper to the avocado and mash with a fork, leaving some chunks for texture.
- Spread the mashed avocado evenly on the toast slices.
- Top each slice with a cooked egg.
- Sprinkle with red pepper flakes if desired, additional salt and pepper, and fresh herbs.
- Serve immediately.
