Avocado-Egg Toast - A Nutritious Way to Start Your Day

Ingredients

  • 2 slices of whole grain bread
  • 1 ripe avocado
  • 2 eggs
  • 1/2 lemon, juiced
  • Red pepper flakes (optional)
  • Salt and freshly ground black pepper
  • Fresh herbs for garnish (cilantro, chives, or microgreens)

Instructions

  1. Toast the bread slices until golden brown.
  2. While bread is toasting, cook the eggs to your preference (sunny-side up, poached, or soft-boiled work best).
  3. Halve the avocado, remove the pit, and scoop the flesh into a bowl.
  4. Add lemon juice, salt, and pepper to the avocado and mash with a fork, leaving some chunks for texture.
  5. Spread the mashed avocado evenly on the toast slices.
  6. Top each slice with a cooked egg.
  7. Sprinkle with red pepper flakes if desired, additional salt and pepper, and fresh herbs.
  8. Serve immediately.

Pro Tip

For extra flavor, try drizzling a little olive oil or adding a sprinkle of feta cheese or everything bagel seasoning on top before serving.
